Irish Dish of the day:Boxty
Releasethe Krakken
Well i'm building this up to try it out later. Gout has cut my activities a bit down. An Englsih comedian yesterday stood in for Jon Stewart in the "The Daily Show" and he said that the English has managed to take 2 key elements of good food out of their cooking 1. Taste 2. Nutritional Value. Looking at the food so far I dont think this is the case with Ireland?
Boxty (bacstaí or arán bocht tí in Irish meaning "poor-house bread") is a traditional Irish potato pancake. The dish is mostly associated with the north midlands, north Connacht and southern Ulster, in particular the counties of Mayo, Sligo, Donegal (where it is known locally as poundy or poundies; also known as potato bread in Ulster), Fermanagh, Longford, Leitrim and Cavan. There are many recipes but all contain finely grated, raw potatoes and all are served fried.
The most popular version of the dish consists of finely grated, raw potato and mashed potato with flour, baking soda, buttermilk and sometimes egg. The grated potato may be strained to remove most of the starch and water but this is not necessary. The mixture is fried on a griddle pan for a few minutes on each side, similar to a normal pancake. Traditional alternatives include using only raw potatoes, boiling it as a dumpling or baking it as a loaf. The most noticeable difference between boxty and other fried potato dishes is its smooth, fine grained consistency.
lord Scego proposed this. Again as with colcannon the Irish gets all singing and rhyming when it comes to food.
Here is a sample of 3 rhymes. Ahh so we see Grianne is not eating her Boxty
Boxty on the griddle,
And Boxty on the pan;
The wee one in the middle
Is for Mary Ann.
Boxty on the griddle,
boxty on the pan,
If you can't bake boxty
sure you'll never get a man.
Boxty on the griddle,
Boxty on the pan,
If you don't eat boxty,
You'll never get a man.
recipe
1 1/2 cups grated raw potatoes
1 cup all-purpose flour
1 cup leftover mashed potatoes
1 egg
1 tablespoon skim milk
salt and pepper to taste
1/4 cup olive oil
Directions
Toss the grated potatoes with flour in a large bowl. Stir in mashed potatoes until combined. In a separate bowl, whisk together the egg and skim milk; mix into the potatoes. Season to taste with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Drop in the potato mixture, forming patties about 2 inches in diameter. Fry on both sides until golden brown, 3 to 4 minutes per side. Drain on a paper towel-lined plate. Serve warm.
